Who we are?

Le Caméléon is the “chocolatería con-sentidos”, promoting the culture of cocoa and chocolate. It opens the door to sensory and special experiences, only created by the Belgian and Mexican fusion. Our chocolate is unique, as our story: with flavours, textures and processes perfected through three generations of Belgian chocolatiers.

Our work was rewarded awarded with the bronze recognition of the International Chocolate Awards, America & Asia Pacific 2016, for our white chocolate with hibiscus bar which converted it as the first Mexican chocolate bar to get an award in this competition. We received three awards in 2017, five in 2018 and five in 2019, including a special gold medal for our cocoa paste So. Xo. Root 7 Blanco Jaguar, a gold medal and special gastronomic award for our grasshopper filled chocolate.

Native of Belgium, Sophie Vanderbecken is a professional taster, founder and owner of the chocolate workshop Le Caméléon®, established in Mexico City in 2003.

As a cocoa and chocolate expert, she developped the Xocoteca, the aroma box to learn tasting chocolate. She imparts conferences, tastings and experiences in universities and companies. She is a juror for different competitions and quality control consultant for the chocolate sector. Apart, she has been designated as one of the 50 women who marked the Mexican gastronomy during the last decade, by the Gourmet de México magazine.
